From the Kitchen: Chef Franco Coppola

In our Q&A with Chef Franco Coppola, of Tarantella Ristorante in Medford, we discuss holiday meals with his large family.

What is your favorite holiday tradition?
It is definitely the seven fish course. My favorite thing to cook is the fried or pan-seared Baccala’, which is salted cod.

What do you remember the most about the holidays when you were growing up?
I remember a family reunion of about 30 people and the never-ending food courses. And in my family’s case, never-ending desserts.

What's the biggest difference in the restaurant during the holiday season?
We definitely get busier. People start ordering more take-out after spending exhausting days in crowded malls. Besides always changing our holiday specials, we sometimes offer gift certificate specials, such as if you buy a $50 card, you get an extra $20.
